Hold down the button on the top of the ipod that turns it on/off. While you are holding that down press the circle button near the bottom. You will hear a click, like a photo being taken. The photo is stored in the photo app on the ipod and when you plug the ipod into a computer, iPhoto will open and you can download your ipod screenshot.
